Out to Lunch

I'm pretty boring when it comes to what I fix for lunch and usually end up with the standard sandwich or oh, so gourmet option of Mac and Cheese. Today I was craving something different, so I pulled out a frozen salmon fillet and threw it in the oven with a brush of olive oil, lime pepper, salt and pepper. 12 minutes later I laid it over a bed of spinach, cucumbers, red bell peppers, avocado and sugar snap peas.


Now, if only I could top it off with an afternoon nap...

I think you your lunch looks fab! By the look of this lunch I bet your sandwiches that you call standard would be more like a gourmet sandwich! Simply yum... looking!!!

mmm. my lunch usually consists of romaine lettuce with some marinated tuna. BOR-ING. can i hire you??

Well Kelly, if sandwiches sound OK to you, I'm available for hire! This dish was quite out of the ordinary for me lunch-wise. At least your tuna is a healthy alternative to my Mac and Cheese :)

Ohhh ... this is making me so hungry. It looks delish (though, I got to tell you, I can eat mac and cheese FOREVER. It may be the most perfect food ever- noodley + cheesey = mmm mmm mmm!)

Joyce, I made the mistake of asking Courtney if she wanted a sandwich when I was in the kitchen one day. Her reply, "Oh yeah, I would love one!" Me thinking no problemo, meat, cheese, bread, maybe a little mustard bada bing! OH it couldn't be that easy. Her reply, "I will have, lettuce, thinly sliced tomatoes, two slices of cheese, avocado, a tad bit of pesto and lightly toasted in the panini press" Need I say more :)....I think I love her more for that, b/c it got me thinking how I had been missing out!

What brand frozen salmon... Whole Foods by chance? I've been wanting to find/try to find a good frozen fish. Thanks!

Actually we buy the bags of frozen fillets from Kroger's and they are so so good! We typically buy Tilapia and Mahi Mahi, but I bought one bag of salmon for me since J isn't much into that fish. It tastes fresh and doesn't at all look or smell fishy. I love it!

Funny to see this salad. My husband who works from home has this for lunch all the time - one of his favorites. AND he manages to get the nap in as well. As I trudge off to my office job everyday, I am insanely jealous.
