Boy, Oh Boy

What started as a small break from the computer unintentionally turned into a sabbatical blog leave, and my world has changed tenfold in the process. In January we moved from our overseas adventure back to Texas. And what better time to have returned because in June we welcomed our first child, Ory James. Life couldn't be sweeter!

I also started a textile business, Mela & Roam, selling exclusive handcrafted linens discovered during my Southeast Asia travels. Having gone into labor two weeks early, the website is temporarily filled with quick snapshots of just a smidgen of my inventory. Each 'dohar' and throw is one-of-a-kind, so documenting every piece is a slow process when the tiny lips above need constant smoochin'. I love being able to share part of my travels and found pieces through Mela & Roam, and the blankets—ranging in size from Baby to King—have been incredibly well received; I can hardly keep them in stock!

Malaysia taught me a great deal about seizing every possible moment, accepting [and loving!] change, and adapting no matter what life throws your way. Detaching from a computer for, oh, so long allowed me to focus less on 'reporting' and more on actual living. I'm still learning how to juggle baby, business and blog, but I'm doing my best to live in the present if nothing else.

My obsession for textiles is no secret, and perhaps one of the best parts of living in Southeast Asia is being surrounded by ethnic batik, ikat and hand-embroidered fabrics. I just finished a 3-day batik painting class and now have even more appreciation for the tedious process that uses a manual wax-resist dyeing technique. When researching ideas for my class I discovered Toronto based artist Gabrielle LaSporte. I love her spin on batik, taking a traditional process and transforming it into modern, fine art with loads of character.

Warning: If raw meat gives you the heebie-jeebies, ignore this post entirely. 'Boning' is not for the faint of heart, as I quickly learned.

Because misery really does love company, friends and I often gather to master complicated culinary techniques. In the past we've baked macaroons, home-cured salt pork and, most recently, boned chickens à la Chef Jacques Pepin. By the way, why isn't the term deboning?

The first round of gutting took an hour to complete and was filled with girly shrieks of both disgust and conquest. The second round was done in 25 minutes. We dubbed ourselves the Julia's of Malaysia; we may have gotten cocky.

After boning we made chicken ballotines by stuffing the birds with sausage, apples and sage. Cue more high-fiving and celebratory toasting because stuffing meat with more meat is downright thrilling.

The laborious process was worth every bit of the blood, sweat and near tears. And upon completion you ~~forget having to 'pop' a spongy vein from the chicken's neck~~ overzealously declare the next mission to be a Turduken. Who says being a lady of leisure is all sunbathing and cocktails? Well, maybe the cocktail part is true...

Sausage, Apple and Sage Stuffed Boneless Whole Chicken

1 chicken

1 lb (450 g) pork sausage meat [We made our own using this recipe.]
3 apples, peeled and chopped
2 onions, finely chopped
1 cup celery, finely chopped
1 tbsp sage, chopped
1 tbsp parsley, chopped
3 cups fresh breadcrumbs
1 tbsp olive oil
2 - 3 eggs
salt and pepper

Bone your chicken. Earn the right to curse and drink. A lot.

Heat oil in a large saucepan and cook sausage meat until it has browned, breaking the meat up with a fork while cooking. Drain the meat juices and fat, leaving ¼ of a cup of the juices in the pan to saute the vegetables in. Transfer the cooked sausage meat to a large mixing bowl.

Fry the chopped apples, celery and onion in saucepan with the sausage meat drippings for about 10 minutes or until ingredients are fairly soft. Remove from heat and add to the sausage meat along with the breadcrumbs, parsley, sage, salt and pepper. Mix all ingredients well. Add the two beaten eggs, mix thoroughly to bind and fill the bird's body cavity.

Truss boned and stuffed chicken and bake in a 350ºF oven for 1 hour 30 minutes until the internal temperature registers just under 180ºF. Baste often and keep an eye on the skin to make sure it doesn't burn; I placed foil over the pan for half of the cooking time.

Not a new trend by any means, but I adore the ombré hair movement that's still making waves throughout Hollywood. The graduation of colors from dark to light is both playful and edgy, and has me contemplating whether or not to subtly dip my own tresses.

Moving and Shaking

I've been doing a lot of moving and shaking since my trip to the US back in, ahem, July. It may take some time to dust the cobwebs off this site, but I'm ready to get rolling again. For starters I'm imbibing in this drink recipe schematic that was used as a demo print for Calcomp pen plotters in the late 70′s. The multitude of stipple and hatch patterns used to differentiate ingredients will cause engineers, designers, AutoCAD enthusiasts and dipsomaniacs everywhere to rejoice.

Although the master copy suggested serving a Rusty Nail with scotch and Demerara rum—it should be Drambuie—and Tom Collins with vodka instead of gin, I still appreciate the gusto required to create such a quenching blueprint. Besides, here in Malaysia they've been known to mix margaritas with Hennessy, so we're a little lax with recipes anyhow. ¡Salud!

Tomorrow I'm taking off on a 30+ hour flight bound for American soil. I haven't stepped foot inside the good ole' USA in over 16 months and my heart misses it dearly. I plan to spend all of July smothered in barbecue, queso, Target, baby kisses [I finally get to plant my lips on my year old godson!], and lots and lots of late giggly nights around the family table. As much as I love exploring exotic locales, the next few weeks at home with loved ones is all the mojo I'll need to stay inspired. I promise to return refueled and Southern-fied, and I can't think of anything more intoxicating than that. It's going to be a bon, bon voyage for sure. Happy Summer!

I'm forgetful. If it's not written in my planner, it's likely I'll never remember to call Aunt Sue on Friday or pick up my husband from work, luckily the latter only occurred once. Because of my absent-mindedness I often triple check my belongings when I'm on the go [This proves most successful when I actually remember what I arrived with in the first place.] And because I worry most about horrendous accidents like ~~leaving my husband at work again~~ 'Camera Loss,' I'm taking cues from Andrew McDonald to prevent my dreaded fear. He saved a series of cheeky self-portraits on his camera's memory card in hopes that Finders Keepers couldn't resist a humorous plea!

When BP representative Randy Prescott proclaimed "Louisiana isn't the only place that has shrimp," I thought of my favorite man Timmy Cheramie and wondered if Mr. Prescott has ever peeled his own shrimp. See, Mr. Prescott, in the South we're taught a lot of things like how to make a roux; what's in a trinity; proper pronunciation of words like Tchoupitoulas, Ouachita, Natchitoches and Atchafalaya; and most importantly, if you can't say anything ~~smart~~ nice then don't say anything at all.

The tragic Deepwater Horizon oil spill hits close to home, literally. This ugly explosion not only claimed 11 lives, including a childhood friend, but the continued damage to the Gulf Coast is gutting. More than 125 marshy miles of Louisiana coastline—and parts of Alabama and Mississippi—have become mucked up in crude sludge. Regardless of what precautionary measures were or were not taken and where the blame lies, the chief concern is will and can this mess be cleaned, preferably before hurricanes tear through the South.

So while Louisiana may not be the only place that has shrimp, it is home to roughly a third of the U.S. seafood industry. It's also home to the most soulful shrimpers and fishermen in the business, and that means something too. It's not just where they work and how they make their living; it is their home and it's where they and the multiple generations before them spent their entire lives, working, living and being South Louisianians. So you see, Mr. Prescott, it's more than just shrimp that are being threatened here; you won't find the Mr. Cheramies ANYWHERE else!

Brandy (You're a Fine Girl)

It's summertime, it's scorching, and my seasonal summery sweet tooth is in full swing. Heavy desserts are out of the question in this heat, so I'm turning to berries, passion fruit puree, mint and fresh whipped cream atop a crunchy retro Brandy Snap instead. Though a tad labor intensive, they sure taste mighty fine!

Brandy Snaps
Makes about 36

4 oz butter
3 oz caster sugar
6 oz golden syrup
1 tbsp lemon juice
4 oz flour
1 tsp ground ginger
½ pint cream

Preheat oven to 350° F/180° C and have three ungreased baking trays ready. Place two racks near the center of the oven.

Put the butter, sugar and syrup into a heavy-based saucepan and melt over a gentle heat, stirring constantly. Don't let the mixture get too hot or it will cook the flour and stop the snaps from spreading. Add lemon juice, sift in the flour and ginger, and mix together.

Drop the mixture in teaspoonfuls on the trays leaving plenty of room for them to spread. Putting two spoonfuls per tray is safest and ensures you can enjoy the shaping process rather than feeling flustered and rushed; four per tray is maximum.

Put two trays in the oven and cook the snaps for about 8 minutes. They will spread out, bubble, and turn golden. Remove the trays to a cooling rack and let cool just slightly [under 1 minute]. Put the third tray in the oven and get the timer before shaping the first batch.

To shape, lift the snaps one at a time with spatula, flip onto a wooden board. Traditionally they are rolled resembling cigars, which you can do by shaping with ungreased cream horn molds or greased wooden spoon handles. I left mine flat then used a round mold to cut even disks. Continue until all the mixture is used, alternating between one and two trays in the oven.

To make a passion fruit puree, juice passion fruits to make 1½ cups juice and combine with 1 cup sugar and ⅓ cup water in a large saucepan. Bring to a boil over medium heat, lower heat and simmer for 5 - 10 minutes, until slightly reduced. Puree, strain and chill.

Before serving fill rolled snaps with fresh whipped cream or top disks as I did with whatever you fancy.

Note: If they sit longer than one hour with cream they will begin to soften and become a mess. Also, the sticky shaping process may or may not go awry, reducing final snap count from 36 to 6—and causing you to curse like a sailor. But keep at it because practice is key with this recipe.

On a wing and a prayer I entered the KL Photo Awards, and out of nearly 1,700 submissions from 38 countries one of my portraits from India was selected as a Top 40 finalist. I can't quit pinching myself!

Technicolor Dreamcoat [Jaisalmer, Rajasthan]

India is unquestionably rich with endless photo ops, and I beamed watching clothes and skin morph into technicolor dreamcoats. I spent every second in awe of the vivid people and their undeniably unique personas.

Everyone seemed beautiful and interesting enough to warrant a portrait of his or her own, and I can only hope my efforts would make this woman proud. I've had a few people ask whether or not she granted permission of this photo. I use eye contact and communication—often gestural due to language barriers—to consciously know I have complete consent in every click. Otherwise my Catholic guilt would ride me till eternity!

The judges will soon announce the winners, but entries are also subjected to a People's Choice vote à la American Idol. This is such an exciting category, so please support the artists by taking a few seconds to vote for your favorite [once per computer, but smart phones give double the ammo!]. Polls close this Sunday, May 16th and the top three contenders, myself included, are neck and neck — it really is anyone's shot.

My friend, Keith, recently visited Phnom Penh's Wat Preah Keo Morakot and was mesmerized by the pagoda's grounds. The site is a veritable visual playground for any photo enthusiast, but it's the surrounding 604 meters of ancient Khmer frescoes that are most photogenic! The paintings are over a hundred years old and illustrate Reamker, a Cambodian epic poem based on India's Ramayana legend. Today, the weather and microorganisms are gradually eroding the paintings, leading the Royal government to reach out for preservation and restoration support from other countries. While I certainly hope the murals are saved from future deterioration, their present state tells a fascinating story all of its own.

Dog photographer Erin Vey's behind the scenes Bark Blog will make you drool. Or maybe it's the dog's drool, but regardless her work epitomizes cute and cuddly. After cooing over a recent tea party shoot that includes Bella the Divalicious French Bulldog and two very giddy girls, I spotted the most honest photo of a party crashing St. Bernard. I love how Erin captured such a candid moment that boasts a [5 month old!] Saint's larger than life personality and, clearly, size. What a day brightener!

We rescued sweet Burkly Deluxe as a full grown woman, but I sure wish I knew her in those tender years. Puppy Saints slay me.

A Clean Sweep

When a friend relocated to Kuala Lumpur and offered to toss a few of my must-haves into their sea shipment, I thought of two things: a rug and soap [and also some outdoor fabric since sweet friend was extra spatially generous]!

While I had to defend my frivolous soap solicitation to many, living a year with only Dettol is worse than any passing judgment. In the blink of an eye I threw copious amounts of Caldrea into my online cart and have since slathered myself senseless in their newest scent, Sea Salt Neroli. This fragrance is a mix of lemon verbena, cardamom, sea salt and neroli, which is the blossom of the Tunisian bitter orange tree. In other words, Dettol it is not.

I'm already drafting lists of other 'Musts' to snag during our summer trip home: Silpat liners, drugstore mascara, real Chuck Taylors and, no doubt, plenty of Sea Salt Neroli refills. Sometimes it's the tiniest things that make us most excited and feel closer to home, and for that I'm not defending a thing!

I Feel Like a Natural Woven

I've always loved the look of natural woven jute rugs, especially when layered with other rugs like in designer Kristan Cunningham's living room.

But they usually feel quite rough, and frankily I have no use for anything remotely abrasive in my home. However on a desperate whim to break up our stark marble floors, I purchased West Elm's Jute Diamond Rug. We finally unrolled it last night and I nearly threw myself straight on top. It's seriously soft, thick and comfortable, and I do believe I've been converted to the jute side.

I recently joined a book club and have since been on a reading roll ...I've even begun eyeing my husband's travel-friendly Kindle. I just can't get enough good literature into my hands, and I find myself pestering everyone for a list of word-worthy recommendations. Thanks to City Secret's Books: The Essential Insider's Guide I'm now giving all friends [and strangers] a break.

Over 150 novelists, critics, historians and editors have contributed their most favored tomes for a compilation of overlooked must-reads. The book is organized alphabetically by title and covers both old and new works from every genre imaginable. Not only would this book make the ultimate gift for bibliophiles, but a portion from each sale goes to First Book, and so far over 50 million books have been provided to children in need!

By the way, don't fret if your crowd is more into the big screen than the written word because there's a book for them, too.

I'd pair it with an arty ring, throw on sandals that only have to carry me as far as the patio, and invite friends over for gimlets and okra. We'd kick back in recycled wood chairs I found in India and gab till dawn. Who's coming over?

Out of the Frying Pan

I may be a Louisiana girl, but contrary to Southern code I do not fry everything I eat. However, when I stumbled upon the largest, most gorgeous okra I'd ever laid eyes on I couldn't help but throw caution to the wind and frying pan. The Lee Bros. Southern Cookbook is quickly becoming my down-home comfort food Bible. Their chile dusted fried okra —dipped in peppered vinegar, no less— was such a hit they will definitely serve as my next cocktail party staple.

Crispy Fried Okra
Prep Time: 30 minutes; Makes: 2 pounds [enough for 6 to 8 as a side dish and 12 for snacking]

4 cups peanut or canola oil
2 large eggs, beaten
¾ cup whole milk
2 cups stone-ground cornmeal
3 tablespoons all-purpose flour
1½ teaspoons salt
1½ teaspoons freshly ground black pepper
2 pounds fresh okra, sliced into 16-inch-thick rounds [about 7 cups]
Crushed red pepper flakes [optional]
Sea salt [optional]

Preheat the oven to 225°F.

Heat oil in a 12-inch cast-iron skillet or a 3-quart enameled cast-iron casserole until the temperature on a candy thermometer reads 375°F.

In a large bowl, whisk together the eggs and milk until they are well combined, about 1 minute. In a medium bowl, sift the cornmeal, flour, salt and pepper together twice. Add the okra to the egg mixture and toss until it is evenly coated. Scatter half the dredge over the okra and toss to coat. Scatter the remaining dredge over the okra and toss again.

Transfer about one-third of the okra to the oil with a slotted spoon and fry in batches, turning as necessary with the spoon, until the slices are golden brown all over, about 2 minutes per batch.

Using the slotted spoon, transfer the okra to a plate lined with a double thickness of paper towels. When it has drained, transfer to a ceramic serving dish that holds heat well and place in the oven until ready to serve.

Dust the okra with red pepper flakes and sea salt, if desired, and pass a cruet of Pepper Vinegar* around the table when you serve.

*For an extra kick, I often use Pepper Vinegar when cooking. Simply add a few bird's-eye chiles into a cruet of white wine vinegar. The vinegar will be infused in 24 hours and keep for months in the refrigerator.

Learning the jewelry trade from his grandfather, Prabin Bajracharya, 34, took over the family business nearly eight years ago. Since then he's worked out of a dollhouse-sized shop creating necklaces, earrings, brooches and bracelets grand enough to impress the most discerning tastes. Prices range from $100 to $1,000—most average under $500—with standout pieces being etched silver encrusted jade bangles [$40-60] and an emerald and hand-carved amethyst filigree drop featuring Goddess Tara [$500]. After hours ogling every semi-precious stone in sight, I left with a ruby, lapis, emerald and shell pendant that I couldn't bare to part with, which seems to be a common reaction to all of their objets d'art.

Cajun Bucket List

I've owned Chef John Folse's Encyclopedia of Cajun & Creole Cuisine for nearly 5 years and not a single week passes where I don't thumb through this 800+ page monstrosity. I've written about Folse's Shrimp Creole and Stuffed Mirliton, but it's his Lagniappe List in the back of this cookbook that really whets my appetite. The list is dedicated to restauranteurs and entrepreneurs past and present who have blazed the Southern food trail, and it now serves as my Cajun Bucket List. Though I've already had a decent sampling of the list's contenders—some of which are included in my New Orleans post—there's still plenty left to devour. What a Long, Strange Trip It's Been

I'm finally back and it will take a while to digest the full intensity of India and Nepal, not to mention the deluge of photos I snapped along the way.

Though the trip was certainly trying at times with the barrage of touts, hardcore negotiations over everything from chewing gum to antiques, an overnight ride on the Indian Railways, and [holy] cow patties splattered onto my legs not once, but twice — I still found myself in constant amazement of the unforgettable sights. I witnessed every extreme imaginable; I interviewed a princess, watched a Hindu cremation ceremony on the Ganges, rode camels into the sand dune sunset, and ate my weight in garlic naan [which, by the way, is as close to Nirvana as I've ever been]. But above all else, I stood in awe of the vivid people; though I was in the world's second most populous country, each and every person had a way of standing out in the motley crowd. These memories will forever be impressed into my mind and soul.

I've had so much fun filling in for Court over the past two weeks. Thanks for sticking with me and for all the lovely comments. To those readers in Houston, I hope to cross paths with you once I'm there!

Until then, I leave you with a few pictures, taken from my apartment, of the most recent big snowstorm to hit NYC (again!). While living in NYC, I've had the great pleasure to overlook the most charming historic cemetery. It happens to sit under the original St. Patrick's Cathedral (which later got quite a fancy upgrade on Fifth Avenue).

I will dearly miss this view. But...I'd be lying if I said I was sad to ditch the snow boots and heavy coats!

I’ve long had a soft spot for succulents. Being from Arizona, they remind me of home. Having absolutely no green thumb, they’re my plant family of choice because they’re low maintenance [read: slightly harder to kill] and so interesting. I'm constantly amazed by the hundreds of unique forms this plant species can take. They make for incredible images, but also beautiful houseplants, and thus also great gifts. And unlike when sending flowers to friends, succulents will last for months.

If you buy succulents of your own, be sure to find out how often to water them. They don’t take kindly to over-watering. We Arizonans can, after all, only handle a dry heat.

2009 was the year of Quiplip cards. I just could not get enough of those sock puppet cards. 2010 will be the year of Uncooked cards. Because they are hilarious, irreverent, and utterly ridiculous. And these days, we can all benefit from a little humor by way of our mailboxes.

Music Memory Lane

As I mentioned a couple of days ago, I’m in the process of making my exit from NYC. Naturally I’m feeling very nostalgic. If I had to sum up my NYC cultural life in a word, it would be: Concerts. My favorite way of experiencing New York City life was through music, particularly by attending shows. There was a period where I could clock in one or two a week. [Oh youth, where did you go? We had such a good thing going.] If music was my religion, then Bowery Ballroom was my church.

As I tearily thumb through the stack of ticket stubs I've so obsessively saved, I’ve reflected on my absolute favorite shows and have settled on three.

• Most likely to make you want to make you ditch your boring day job, become the female lead in an all-boy band, don some hot little number, and then get up on stage, dance the night away, and show those boys a thing or two in front of hundreds of mesmerized fans: Metric.

• Most likely to get you so jazzed that you can’t contain your enthusiasm, and you high kick with such fervor and force, that your shoe comes flying off into the audience – as I once witnessed one of this band’s members do on stage: Dr. Dog.

Apologies for the less than ideal quality here – this was the best live video I could find that accurately captures how frenetically fun their shows are, and how they sing their hearts out. By the way, it was the chap in glasses and hat on the right who lost his shoe [never did know if he got it back]:

Productive Procrastination [Really!]

After 8 years, I have decided that it’s time for me to bid adieu to New York City and usher in the next phase. It’s looking likely that I will start anew in Houston [I told you I missed Courtney!]. As I imagine a new life in a new town, I have the daunting yet thrilling task of deciding what sort of job to look for. It is exciting to think that the world is my oyster and I can use this opportunity to pursue my passions.

For inspiration [and maybe an ounce of procrastination], I recently re-watched a speech given by Sir Ken Robinson at an annual TED conference on creativity. Robinson makes the compelling argument that it is misguided, even risky, to think of creativity as something that exists only in the arts or music. Rather, it has the potential to exist in everything, and everything is better for it. Creativity has just as natural a home in negotiating a business deal as it does in designing a beautiful piece of clothing.

For me, Robinson’s TED speech is like a tune-up when I need to be reminded to tap into the creativity and passion that exist in us all to answer big or challenging questions. It’s a bit lengthy, but a truly chills-up-the-spine satisfying way to spend 20 minutes. And he’s funny!

P.S. Robinson has a terrific book called The Element: How Finding Your Passion Changes Everything, a thought-provoking read for anyone questioning her career or seeking to know what inspires her the most.

Hello, ITL readers! My name is Kelly, and I have the great honor of taking the reins while Court scours India for fabulous and interesting finds to share with us upon her return.

Courtney and I met in 2004 when we were both working for Hollywould in NYC; we were fast friends. Her departure from Hollywould was a sad day for me. Her departure from NYC was devastating. I still miss her dearly, but love that ITL has been one more way to keep up on her exciting life and the beautiful things she discovers along the way.

We all know Courtney has impeccable taste and a fantastic eye for design. I have big shoes to fill and hope I can do even half as good a job as she does.

Speaking of shoes…Since shoes fatefully brought Courtney and me together, they seem like a fitting start for my ITL stint. Loeffler Randall has long since been a favorite brand for us both. She's worked for fashion and editorial heavy-hitters like Esquire, Cargo, Hollywould, Felix Rey and Fresh, and she's got an uncanny ability to always nail trend forecasts and branding spot-on. Kelly's sensibility is modern and engaging, and I can't wait to watch as she makes her impressionable—and darling!—mark on the blogosphere.

When the Bollywood-fantastic Jai Ho scene at the end of “Slumdog Millionaire” moved me to tears, my curiosity about India spiked to near obsession: I knew I had to visit, and soon. Next week I'm taking off on a 3 week adventure to India and Nepal with a dear friend, and I can barely calm my overwhelmed and anxious heart.

While I don't have any preconceived notions of this journey, I'm sure to witness every extreme imaginable. There's also something about travel that incessantly reminds me, regardless of schooling [both university and hard knocks], how much I have yet to learn; nothing compares to the awareness and education gained from visiting a foreign country. I promise to share all the ups and downs upon return, but this blog will be in great hands in the meantime. So stay tuned and phir milenge, friends!

Give Some Sugar

This year my Valentine's Day is being replaced with Chinese New Year festivities [...when in Rome!], but I'm still tempted to whip up a tray of Passionfruit Marshmallows and dole them out liberally to all my loved ones. There's something understated about the marshmellow, and a gourmet-like version would, undoubtedly, be an unexpected crowd pleaser. The light, fluffy texture is the perfect compliment to passionfruit's tartness. Happy Valentine's Day and Gong Xi Fa Cai!

Passionfruit Marshmallows
Prep time: 15 mins, cook 10 mins plus standing; serves 15

snow sugar* for dusting
180 ml [about 10 passionfruits] strained passionfruit juice
20 gm powdered gelatine
500 gm caster sugar
2 eggwhites
pinch of salt

Lightly grease and line a 17.5cm x 25cm shallow cake pan and dust base liberally with snow sugar. Combine passionfruit juice and gelatine in a bowl and set aside.

Combine caster sugar and 1 cup water in a saucepan and cook over low heat, stirring, until sugar dissolves, then increase heat to medium and cook for 5-10 minutes or until syrup reaches 125°C on a sugar thermometer. Remove from heat, add passionfruit mixture to syrup and stir until gelatine dissolves.

Meanwhile, using an electric mixer, whisk eggwhites and a pinch of salt until frothy. Gradually add passionfruit mixture, whisking continuously on medium speed until mixture has doubled in size, then slowly decrease speed and mix until mixture is warm [about 40°C]. Pour into prepared cake pan, and, using a lightly oiled spatula, spread evenly then dust top liberally with snow sugar. Stand at room temperature for 3 hours or until firm. Using a sharp knife, cut marshmallow into 2.5cm squares and roll in snow sugar to coat.

Store in an airtight container between sheets of baking paper at room temperature for up to 2 weeks.

*Note: Snow sugar is a confectioner’s sugar with a vegetable fat added to prevent the sugar from absorbing moisture and dissolving. It’s available from specialty food stores.

I spent Sunday surrounded by camera buffs, gear heads and flash enthusiast/National Geographic photographer Joe McNally; it was heavenly. This was Joe’s first extensive teaching tour in Asia, and I sat wide-eyed as he built lighting apparatuses that rivaled the Petronas Towers. Not only was it fascinating to watch his work come to life before me, but it reminded me how much I love to learn. It's never too late to discover a hobby, and the time and energy spent honing your skills is a priceless personal investment.

Margarita Madness

Last summer I tried my darndest to perfect the ultimate margarita. After a month of adamant testing, I never quite found the one. Perhaps Giffard's new Agave Triple Sec could be the secret ingredient. Just one day prior to moving overseas, I disastrously lost my iPhone and every day since I muse over that Smarty Pants gadget. Everything under the sun was, literally, at my app-loving fingertips and I just discovered four more reasons to dis my normal cell:

• Words with Friends. [Free] Call all Scrabble obsessed, logophile phenes and engage in a word-slinging crossword combat. If you're afraid you can't mix work with your puzzling play, a text message or email will alert when your turn is up.

• Convertbot. [99¢] A graphic, well-designed conversion robot that translates over 400 different units including currency, length, mass and time — but handling conversions to and from mixed units pretty much takes the cake.

• AppBox Pro. [99¢] Mimicking an Apple home screen, your phone will be loaded with over 20 apps like a real-time currency converter, worldwide holiday calendar, tip calculator, translator, cinometer [a level utility], flashlight, and even a system to track the best time to try and get pregnant. It's the closest thing to a personal assistant without the ego trips and yearly salary.

• Karma Art. [99¢] The most creative way to pass time in doctors' offices/grocery store lines/on hold with your accountant...or if you just want to send something other than the ubiquitous text. Put together an original masterpiece quicker than you can say Win, Lose or Draw.

This Ain't Your Kid's Popcorn

Being from Louisiana, it almost feels sacrilegious to not host a Geaux Saints Super Bowl shindig this weekend. If I was still in the States—or anywhere the game doesn't broadcast at 7:45AM—there's no doubt I'd make this kicky popcorn the leading party player.

Tequila Spiked Caramel Corn
Prep: 1 hour 15 minutes; Makes 16 cups.

16 cups air-popped popcorn
½ cup salted roasted peanuts
1 cup light brown sugar
1 stick unsalted butter
3 tablespoons agave nectar
2 tablespoons light corn syrup
½ teaspoon salt
¼ teaspoon baking soda
1½ tablespoons tequila

Preheat the oven to 250° and position racks in the upper and middle thirds. Toss the popcorn with the roasted peanuts in a large heatproof bowl.

In a large saucepan, combine the brown sugar with the butter, agave nectar, corn syrup and salt and bring to a boil, stirring until the sugar is completely dissolved. Boil over moderate heat for 4 minutes. Remove from the heat. Using a long spoon, stir in the baking soda and tequila; the syrup will foam. Immediately pour the hot syrup over the popcorn and peanuts and, using 2 spoons, toss to coat thoroughly.

Spread the popcorn on 2 nonstick baking sheets and bake for about 1 hour, stirring occasionally and switching the sheets halfway through, until golden and nearly dry. Turn off the oven, open the oven door completely and let the popcorn cool completely before serving.

The caramel corn can be kept in an airtight container for up to 1 week.

Capturing Cambodia

If you ever have a chance to visit, or find yourself anywhere near Southeast Asia, Cambodia is a magical must. It's full of love, warmth, smiles, good food and great hearts. Not to mention ancient ruined temples and the omnipresent juxtaposition of depression and hope that will take your breath away.

Getting a new camera has opened Pandora's Box—motive to take more photos, larger files, the need for requisite drive space, et al. Because my laptop has more than reached capacity and working off an external hard drive has caused many headaches, I'm temporarily passing the photo reins to my favorite documentary photographer, Steve McCurry. I'll post my own take of Siem Reap once I'm technologically up and running again, but this was our weekend in a nutshell [insert a bit of heat and a whole lot of dirt and you'll be right in our shoes!].

In celebration of Thaipusam and KL's long four day weekend, we took off for Siem Reap to mingle with the Khmers and see Angkor Wat, Angkor Thom and Ta Prohm [the temple Angelina Jolie raided as Lara Croft] in all their monochromatic glory. While I knew these sights would provide a plethora to write home about, I had no idea I'd fall so in love with Khmer food...and even cart a container of Amok seasoning back to Malaysia!

Thanks to suggestions from artist-blogger Loven Ramos, we wined and dined at some of the most appetizing spots in the city. And since I can't wait to return for seconds, here is the holy grail of lists to help navigate your way through Siem Reap's crème de la crème:

• Sugar Palm. Cambodian cuisine with an International flair, all in a tree house-esque setting.

• Viroth's. Asian cuisine in an al fresco environment. And a random [and somewhat embarrassing] side note: do not skip out on the cheese sandwich. We ordered one, which led to an additional three orders...after we had already finished lunch.

• Restaurant Le Grand. Located in the beautiful Raffles Hotel, an institution since 1927 and Siem Reap's first hotel. Men should wear pants or the hotel will provide a sarong. We know this from first-hand experience.

• Le Bistrot. Multi awarded French Indochina restaurant in the lovely Victoria Hotel. Be sure to stop and see the tiny crocodiles in the lobby's pond, and take a stroll through the lovely gift shop.

• Abacus. Newly re-opened, it's the only reliable non-hotel high-end diner in town. The frequently changing menu reflects both Euro and Asian influences.

• AHA. We threw caution to the wind and ordered green mango and dried snake salad [Hey, when in Rome...] and a few other nonconventional delights. The portions are perfect for tasting—and sharing with other adventurous eaters.

• Blue Pumpkin. If I had a nickel for every time we stopped for a 1-scoop cone! So many refreshing fruit flavors to choose from and the perfect anecdote to the tropical heat.

• Khmer Kitchen. You'll certainly feel like a tourist sitting in the middle of Pub Street's commotion, but the food is worth its salt. This is a Lonely Planet favorite.

• Cambodian BBQ. Not for the faint of heart, but if nothing else it's a worthy photo op. Nosh on grilled crocs, snakes and ostrich, among many, many others!

...And once your day is done, hop in a funky tuk-tuk and head to a nearby watering hole to wet your whistle:

• Miss Wong. A charming little cocktail nook at the Passage. Such a comfortable and cozy way to end a day of temple touring!

• Elephant Bar. Sit back and unwind in rattan chairs at this luxurious cellar bar in the Raffles Hotel.

• Picasso. Latin tapas bar by the Alley West and next door to Loven's boutique, Poetry.

• FCC. The former mansion of the French Governor General converted into a chic lounge is perfect for a nightcap under the stars. We were smitten with the white sangria, and über comfortable lounge chairs.

In anticipation of my Indian voyage, Meg shared a fantastic article to familiarize myself with every wallah from Kashmir to Kerala. Wallah, or the feminine form walli, is a catchall term for people of a certain occupation, such as dudhwallah [milkman], subziwallah [vegetable man], and so on. These well honed entrepreneurs dominate the bustling streets with their perfected trades, services and smiles.

The Islamic Arts Museum—my favorite building in all of KL—is featuring Steve McCurry's latest photography exhibition, A Common Faith: Travels Through the Muslim World. In addition to being up close and personal with his famous Afghan Girl, McCurry's documentation of India sent me over the moon.

...as if I needed more reasons to fall in love with the country.

We've been in Kuala Lumpur for 10 months and while our length of stay is uncertain, I'm feeling the itch to create more of a home and less of a rental. The barren walls no longer feel modern, but rather naked, the milky marble floors are growing colder by the day, and our spiritless space needs layering and spunk. I'm on a new mission to warm things up because this temporary attitude is wreaking havoc on my home's personality; she needs to come alive — just like Melbourne's Fenton & Fenton.

In the past week I've been known to turn the air conditioner down to an all-time low, blast holiday music ad nauseum, and pay an exorbitant amount for a can of Borden eggnog. I've never drank eggnog from a can in my life, and my grandmother would likely be appalled. It's the first time I'm experiencing a tropical Christmas, incomplete as family's across the globe, and I'm doing my very best to not get homesick. My grandparents adored the effervescent Brenda Lee, and this ditty about pirogues, the bayou, jambalaya, crawfish pie and filé gumbo warms my longing-for-a-taste-of-home heart.

When Happy Menocal emailed a trifecta of inspiration for my holiday card design, I swooned. Dutch ladies posed as color muses; a vintage Cannes postcard boasted perfect type; and the sweet Babar/Rousseau poster led way for a hand-drawn feel. I could stare at these three images all day!

From Malaysia With Love

A few months ago we trekked to the top of the observation deck in KL Tower and stumbled upon a photo op like no other: the chance to don traditional Malaysian costumes and feign royalty. They didn't have much in the way of red and green regalia, so we mixed and matched between women's, men's and even children's wear [see husband's pants] to create such merry ensembles.

Since we won't be home for the holidays, I wanted to send very joyous and smile-inducing mementoes to our friends and family. I couldn't think of a better person to bring my vision to life than the witty, quirky and beyond talented Happy Menocal. I've sang Happy's praises for quite some time now; she's one of my most favorite illustrators around. Not only did she hit the nail on the head with an East meets West inspired design, but she pegged my affinity for Carmen Miranda and created a card that is 100% pure unadulterated hilarity.

I Love Jesus, but I Drink a Little

Christmas 1966: Mom is dazzling in her swingy cream sweater and Dad's kicked back, shoes off, chatting it up with family. Though the photo is crackled and damaged, it somehow adds to the nostalgia of bygone holidays. And perhaps alludes to the confetti of personalities coming together to celebrate the reason of the season: the birth of Jesus and eggnog.

The legendary Amaretto was concocted in this same house around the holidays, but it's Grandma's Eggnog that most screams Christmas. More particularly, it's Christmas Eve and New Years where this milky toddy shines. Measurements were, unfortunately, never quantified in our family recipes—not to sabotage the outcome, but rather in a quintessentially Southern way of assuming the reader inherently knows how many eggs yield appropriate eggnog-tastic results. So embracing that je ne sais quoi sensibility, we begin:

Grandma's Eggnog
2 quarts milk—the only measurement included. If you'd like, use half and half cream to make up some of the requisite 2 quarts.
Eggs, separating whites and yolks—a dozen eggs work for 2 quarts milk
Vanilla extract
Salt
Sugar

In a large pot scald, do not boil, the milk.

Whip egg yolks with a pinch of salt and sugar, starting with roughly ¼ cup of sugar and add from there if it isn't sweet enough. Add this mixture slowly to the scalded milk, a little at a time, stirring constantly so egg clumps don't form in the hot milk. Cook this mixture until it thickens and begins to coat the spoon.

Add vanilla to taste.

Whip egg whites until stiff with 1 tbsp sugar. After the nog has thickened and is cooked, gently fold in the egg whites so they will remain like quarter-sized balls of meringue on top.

For those who like a little "noggy" added, a jigger of Canadian bourbon, straight bourbon or rum should do the trick. Grate nutmeg and sprinkle cinnamon on top. Serve hot and instantly feel warm and cozy. Leftovers can be refrigerated and drank cold the next morning without alcohol in it. Or with—whatever tickles your fancy!

Within seconds of this video, a whirlwind of emotions flooded over me—and my eyes—as I reminisced about entertainers like Washboard Chaz that vividly dot the streets of New Orleans. Some of my fondest childhood memories revolve around my parents throwing us in the car and taking off to any town South of I-10 for an afternoon of riding, eating, laughing and living. These day trips will forever be in my blood, and were my first introduction to spontaneity and new sights.
